Ingredients:
- 2 cups milk
- 6 eggs
- 2 tablespoons butter
- Salt to taste
- 3 cups wheat flour
- 1 tablespoon baking powder
- Margarine and wheat flour for greasing.
Stuffed:
- 1 1/2 slices of Calabrian sausage
- 1 1/2 cubes of Calabrian sausage
- 2 tablespoons of olive oil
- 1 diced onion
- 2 minced garlic cloves
- 2 deseeded and chopped tomatoes
- 1 can of drained sweetcorn
- 1/2 cup chopped olives
- 1 cup Catupiry-type cream cheese
- Chopped chives to taste
- 1 cup grated mozzarella cheese
Preparation method:
First, let’s prepare the filling. In a pan, sauté the sliced sausage over medium heat until browned. Remove and set aside. Next, in the same pan, over medium heat, sauté the diced Calabrian sausage in the olive oil until it begins to brown. Add the onion and garlic and sauté well for about 3 minutes.
Now, add the tomatoes and sauté for another 2 minutes. Finish with the corn, olives, and cream cheese, mix everything well, and add the parsley. Book.
Now let’s prepare the dough. In a blender, blend the milk, eggs, butter, and salt. Pour the mixture into a bowl and mix in the flour and baking powder with a spoon.
In a greased and floured baking dish, place the sausage slices around the dough and carefully place half of the dough on top. Add the filling and place the other half of the dough on top. Sprinkle with mozzarella cheese and bake in a preheated oven at medium temperature (180°C) for approximately 40 minutes, or until golden brown. Our pepperoni pie is ready!
