- 1 can of sweetcorn (drained)
- 3 eggs
- 1 cup of coconut milk
- 1 cup of shredded coconut
- 200 ml of cream
- 4 tablespoons of xylitol (or your preferred sweetener)
- 1 tablespoon of baking powder
Preparation:
Start by blending all the ingredients except the baking powder in a blender until the mixture is smooth.
Add the baking powder and stir gently with a spoon or spatula—do not blend again.
Pour the batter into a silicone mould or a greased and floured pan (use coconut flour if possible for extra flavour and a low-carb option).
Place the mould in a larger baking tray filled with boiling water (bain-marie), and bake in a preheated oven at 160°C for about 70 minutes, or until set and lightly golden on top.
Allow to cool before removing from the mould. Serve chilled or at room temperature.
