Ingredients:
- 1 packet of your favourite chocolate biscuits
- 2 tablespoons cornflour (Maizena)
- 1 cup passion fruit concentrate
- 1 cup fresh cream
- 3 egg yolks
- 1 cup sugar
- 50g chopped chocolate
Method:
Start by chopping the biscuits into small pieces. Set aside.
In a separate bowl, dissolve the cornflour in 1 cup of water. Then, in a saucepan, combine the passion fruit juice, fresh cream, egg yolks, sugar, and the cornflour mixture. Cook over low heat, stirring constantly, until it thickens into a smooth custard-like cream.
Once thickened, cover the cream with plastic wrap (touching the surface to avoid skin forming) and allow it to cool.
Now, in individual dessert glasses or a serving dish, layer the chopped biscuits (reserve a little for topping). Pour the cooled passion fruit cream over the biscuit base, then sprinkle the remaining biscuits and chopped chocolate on top.
Refrigerate until set and nicely chilled.
