In a stand mixer, beat the egg whites until stiff peaks form. Add the egg yolks one by one (sifted if possible) and continue beating.
Gradually add the sugar and beat until the mixture becomes pale and fluffy.
Next, add the water and vanilla extract and mix briefly to incorporate.
Finally, add the sifted flour gradually while continuing to beat at low speed, just until fully combined.
Pour the batter into a greased and floured cake tin. Bake in a preheated oven at medium temperature (around 180°C) until golden and a toothpick inserted into the centre comes out clean.
