Ingredients
Filling:
- 200g dried beef (cooked and shredded)
- 2 tablespoons olive oil
- ½ onion, grated
- 1 garlic clove, minced
- ½ tomato, deseeded and diced
- Chopped parsley to taste
- Salt and black pepper to taste
Dough:
- 2 kg cassava (peeled and chopped)
- Water (enough to cover)
- 1 chicken stock cube
- For frying:
- Oil for deep frying
Instructions
Prepare the filling:
In a pan, heat olive oil and sauté the onion and garlic until fragrant. Add the diced tomato and cook for 1 minute. Stir in the shredded beef, season with salt and pepper, and cook for another 2 minutes. Turn off the heat, mix in the chopped parsley, and set aside.
Make the cassava dough:
Place the cassava in a large pot, cover with water, add the chicken stock cube, and boil until fork-tender. Remove the fibrous core from the centre of each piece, then mash the cassava into a smooth purée.
Shape the fritters:
Take a small portion of cassava dough, flatten it in your palm, and place a spoonful of the beef filling in the centre. Close and roll into a ball. Repeat with the remaining dough and filling.
Fry:
Heat oil to 200°C (or until a small piece of dough sizzles immediately). Fry the fritters until golden brown on all sides. Drain on paper towels.
