Ingredients:
- 1 can of sweetcorn, drained (use the can to measure the other ingredients)
- 1 can of milk (same can used for measuring)
- 1 can of sugar
- 1 can of cornflakes
- ½ can of soybean oil (or other neutral oil)
- 3 whole eggs
- 1 tablespoon of baking powder
- Margarine and wheat flour (for greasing the pan)
- Optional: 2 tablespoons of shredded coconut
Preparation:
Start by draining the corn and setting it aside. Use the empty corn can to measure out the milk, sugar, cornflakes, and oil.
Grease and flour a bundt cake tin. Preheat the oven to medium heat (about 180°C).
In a blender, add the drained corn, milk, sugar, cornflakes, oil, and eggs. Blend well until the mixture is smooth and the corn is fully ground.
Optional: Add the shredded coconut for extra flavour and texture.
Add the baking powder and pulse the blender 2–3 times just to incorporate (do not overblend at this stage).
Pour the batter into the prepared cake tin and bake in the preheated oven for approximately 40 minutes, or until golden brown and a toothpick inserted into the centre comes out clean.
Allow the cake to cool completely before unmoulding.
This cake is soft, slightly dense, and has a naturally sweet corn flavour — perfect with tea or coffee!
