Ingredients:
- 1 ½ cups roasted and ground peanuts (200g)
- ½ cup smooth peanut butter (130g)
- ½ cup icing sugar (83g)
- 2 tablespoons honey
- ½ teaspoon salt
- 2 tablespoons melted butter (24g)
- 1 teaspoon vanilla essence
Candy:
- 200g sugar
- 2 tablespoons butter
- 1/2 cup cream (100g)
Finish:
- Chocolate fractionation
Preparation method:
Prepare the base:
In a large bowl, combine the ground peanuts, peanut butter, icing sugar, honey, salt, melted butter, and vanilla. Mix well until the dough is smooth and combined.
Shape and press:
Line a mould or tray with plastic wrap and lightly grease it. Press the peanut mixture firmly into the tray. Then, evenly distribute the whole roasted peanuts on top and press them gently into the mixture.
Make the caramel:
In a saucepan, melt the sugar over low heat until it turns golden and becomes caramel. Add the butter and stir until combined. Pour in the cream and mix well. Let it simmer until it thickens into a creamy consistency. Add a splash of milk if it gets too thick.
Assemble:
Pour the caramel evenly over the peanut base and spread it out. Place the tray in the freezer for around 30 minutes to firm up.
Finish:
Once set, remove from the freezer, unmould, and slice into bars using a damp knife. Dip each bar into the melted chocolate and place them on baking paper to dry.
Ready to serve!
