- 45 g fresh yeast (or 2 sachets of instant dry yeast – about 20 g total)
- 2 tablespoons sugar
- 1½ cups warm milk
- ½ medium onion (use a full onion for a stronger flavour)
- 1 tablespoon olive oil
- 2 tablespoons butter or margarine
- 1 tablespoon salt
- 4 garlic cloves, finely chopped (or garlic paste to taste)
- About 5 cups cake flour (add gradually until dough stops sticking to your hands)
For the Garlic Herb Topping:
- 3 tablespoons melted butter or margarine
- Garlic paste or finely crushed garlic, to taste
- Salt to taste
- 1 cup chopped fresh parsley
- 2 tablespoons olive oil
Step-by-Step Instructions:
Activate the yeast:
In a small bowl, dissolve the fresh yeast with the sugar. Let it rest for 5–10 minutes until foamy.
Blend the base:
Blend the warm milk and onion until smooth. If you want a stronger onion flavour, use the whole onion.
Prepare the dough:
In a large bowl, mix the milk-onion blend, the dissolved yeast mixture, olive oil, butter/margarine, salt, and garlic. Gradually add the flour until a slightly sticky dough forms.
Shape the rolls:
Form small rolls and place them on a greased or lined baking tray. Leave space between them. Cover with a clean cloth and let them rise in a warm place until doubled in size (about 40 minutes to 1 hour).
Bake:
Preheat your oven to 180°C (356°F). Bake the rolls for 20–25 minutes, or until they are golden brown.
Add the topping:
