Recipe Ingredients:
- 2.2 lb of cassava, peeled and chopped (1 kg)
- 2 tablespoons of margarine (about 28 g)
- 3 whole eggs
- ½ cup of sugar (about 100 g)
- 1 can of sweetened condensed milk (14 oz or ~395 g)
- 1 package of shredded coconut (about 3.5 oz or 100 g)
- 2 cups of milk (16 fl oz or 480 ml)
- ¾ cup of coconut milk (6.8 fl oz or 200 ml)
- 1 teaspoon of salt
Preparation Method:
First, start by placing all the ingredients in a blender, except for the shredded coconut, which should be added at the end.
Then, blend slowly in stages until everything is well combined.
Next, transfer the batter to a bowl and gently mix in the shredded coconut.
After that, pour the mixture into a glass baking dish that has been greased with margarine and lightly floured.
Right after, sprinkle some granulated sugar on top.
Lastly, place it in a preheated oven at 356 °F (180 °C) and bake for approximately 50 minutes or until golden brown.
Finally, remove it from the oven, let it cool slightly, and serve this deliciously creamy cassava cake.
