Ingredients:
- 4 eggs
- 10 tablespoons of sugar
- 15 tablespoons of cornstarch (maizena)
Preparation:
In a stand mixer or with a hand mixer, beat the eggs for 5 minutes until light and frothy.
Gradually add the sugar, one spoon at a time, and continue beating for another 5 minutes, until the mixture becomes pale and thick.
Next, gently add the cornstarch — one tablespoon at a time — folding it in carefully with a spatula or mixing on low speed just until combined.
Pour the batter into a greased baking tin (round or rectangular).
Bake in a preheated oven at 180°C for 34 to 40 minutes, or until golden and a toothpick inserted in the centre comes out clean.
Allow to cool before unmoulding. This cake is perfect on its own or as a base for layered desserts and fruit
