- 20 g instant dry yeast (2 standard sachets)
- 500 g potatoes, cooked (not too soft) and mashed
For the filling:
- 500 g bologna (mortadella), finely chopped or blended
- 200 g cream cheese or soft cheese spread (like smooth cottage cheese or “catupiry”)
- 1 cup chopped fresh herbs (parsley or spring onion)
- 1 cup chopped green olives (optional)
- 2 tablespoons dried oregano
- 1 tablespoon mustard
- 2 tablespoons tomato sauce or purée (optional)
- ½ tablespoon oil
How to Prepare
Make the dough:
In a blender, mix sugar, salt, oil, eggs, and the yeast dissolved in warm milk. Blend well.
In a large bowl, combine the flour and mashed potatoes. Add the blended mixture and knead the dough until smooth. Let it rest in a warm place until it doubles in size (around 1 hour).
Prepare the filling:
In a pan, lightly sauté the chopped bologna with a bit of oil. Add the herbs, mustard, oregano, and optional tomato sauce. Stir in the cream cheese or cheese spread. Let it cool completely before using.
Assemble the rolls:
Divide the dough into small portions. Flatten each piece, fill with a spoonful of the bologna mixture, and shape into a roll. Place on a greased baking tray.
Final steps:
Let the rolls rise again for 15–20 minutes. Brush with egg yolk for a golden crust.
