Ingredients:
- 1 French baguette (or 4 French bread rolls)
- 2 cups whole milk
- 1 tin (395g) sweetened condensed milk
- 3 eggs, beaten
- 1 pinch ground cinnamon
- Ground cinnamon and sugar, to taste (for dusting)
- Sunflower oil, for frying
Method:
Prepare the bread:
Cut the baguette into medium slices (around 2–3 cm thick). Set aside.
Make the soaking mixture:
In a shallow dish, combine the milk and sweetened condensed milk. Soak each slice of bread in the mixture until fully moistened but not falling apart.
Coat in egg:
In another dish, beat the eggs and add a pinch of ground cinnamon. Gently dip the soaked slices into the egg mixture, coating both sides.
Fry:
Heat sunflower oil in a deep pan over medium heat. Fry the slices until golden brown on both sides. Remove and drain on paper towels.
Finish:
While still warm, coat the rabanadas in a mixture of sugar and cinnamon.
