Ingredients
For the pancake batter:
- 2 eggs
- 2 cups all-purpose flour
- 2 cups milk
- 1 tablespoon cornflour (cornstarch)
- Salt, to taste
For the filling:
- 1 large chicken breast
- 1 small onion, chopped
- 1 tablespoon chopped fresh herbs (parsley or spring onion)
- ½ cup milk
- 1 tablespoon cornflour (cornstarch)
- Garlic, to taste
- Salt and pepper, to taste
- Other spices or herbs, to taste
- 1 tub (200g) of cream cheese or Catupiry
Method:
Prepare the batter:
Blend all batter ingredients in a blender until smooth. Set aside to rest while you prepare the filling.
Cook the chicken:
Cook the chicken breast in a pressure cooker or pot with water and a pinch of salt until tender. Once cooked and cooled, shred it finely.
Make the filling:
In a pan, sauté the onion and garlic in a bit of oil. Add the shredded chicken, herbs, and seasoning. Mix well. In a small bowl, dissolve the cornflour in the milk, then pour into the pan. Cook over low heat until it thickens slightly. Stir in the cream cheese or Catupiry until creamy. Remove from heat.
Cook the pancakes:
Heat a non-stick frying pan over medium heat. Pour in a thin layer of batter and cook each side until lightly golden. Repeat with the remaining batter.
Assemble and bake:
Fill each pancake with the chicken mixture and roll up. Place in a baking dish, cover with a white sauce or tomato sauce of your choice, and bake in a preheated oven at 180°C (350°F) just until heated through.
