Ingredients:
- 3 stale French bread rolls (or similar white bread)
- 50 g of grated coconut
- 400 ml of milk
- 1 can of sweetened condensed milk
- 4 eggs
- 1 cup of sugar (for caramelising the mould)
Preparation:
Start by placing the chopped bread, grated coconut, and milk in a large bowl. Mix well and let the bread soak for a few minutes.
Add the condensed milk and eggs, then stir until the mixture becomes smooth and well combined.
In a pudding or bundt mould, melt the sugar over low heat to create a golden caramel. Swirl the caramel around the mould to coat the bottom evenly.
Pour the pudding mixture into the caramel-coated mould. Place the mould in a larger baking dish with hot water (bain-marie) and bake in a preheated oven at 180°C for about 1 hour, or until set.
Once baked, allow to cool slightly, then refrigerate for around 2 hours. Carefully unmould before serving.
